Why hello there! I’m Emily Francesca Jane Lucas and I like to call Dunedin, New Zealand home. I’m into eating pure, natural food and creating dishes which are simple, nutritious and seriously yummo. Since I was a wee lass I’ve shown a keen interest in cooking and eating healthily. Until…as a sprightly young 16 year old, I embarked on a one year high school exchange to Germany, where my diet was limited to chocolate, bread, wurst and alcopops. I felt uber-unhealthy and vowed to never do that again. Ever. Well not very often at least… Due to my newly acquired German language skills, I was employed during the holidays over the hill at Kimi Ora, a German-owned health resort in Kaiteriteri, which started me on the path to culinary enlightenment.  My main role for three consecutive years in the summer holidays was Chief Salad Extraordinaire. Every afternoon in the bright, bright sun I would stroll up to the organic gardens to pick my culinary stars for the day.  These gardens were in top-notch condition as they were tended to by a team of efficient Wwoofers (Willing Worker on Organic Farm), usually of German origin. This job required great creativity as each day 5 different salads had to be made and work in with what the chefs were concocting for dinner that night. I was taught many delicious, seriously healthy dishes that still remain my favorites today and which I will share with you. I love the thrill of visiting new places and I’ve lived and worked in various countries, including Jordan, where I was employed by the Royal Family of Jordan as a nanny.  I’ve always had a love of Middle Eastern food and here I was able to indulge my passion for eating and discovered many new dishes which pack serious flavor punch.  After a recent stint in Belgium, I’ve also developed an appreciation for the simplicity of the French and Dutch dishes I happily devoured.  I have tweaked many of these dishes to give them a healthy twist by cutting down or omitting unnecessary fat and sugar components and adding natural ingredients as substitutes. I’m stoked to be sharing my Super Foodie Adventure with you and hope that you enjoy the ride. Love love, Emily x
